A flat-top griddle provides the ideal surface for smash burgers, giving uniform contact and heat. Preheat the griddle until it’s smoking hot. Use small meat balls (2–3 ounces), place them on the surface, and use a firm spatula or press to smash them flat to about 1/4-inch thickness immediately.
Season the patties right after smashing and cook without moving until the edges brown and the top shows cooked meat color—about 2–3 minutes. Flip once and cook 30–60 seconds more; top with cheese and cover if needed to finish melting.
