Smash burgers are thin patties pressed onto a hot cooking surface to create maximal crust and intense flavor. Start with small meat balls—about 2–3 ounces each—made from 80/20 ground beef. Heat a heavy skillet or flat-top griddle until very hot; a cast-iron pan works well.
Place the meat ball on the hot surface and immediately press it flat with a sturdy spatula or a dedicated burger press to roughly 1/4-inch thickness. Use a second spatula or a sheet of parchment under pressure to keep your hands safe while pressing. Salt and pepper right after smashing.
